- 1-1/2 pounds lean ground beef shopping list
- 1 cup green pepper, chopped (optional) shopping list
- 3/4 cup onion, chopped (I use a red onion) shopping list
- 2 cloves garlic, minced shopping list
- 4 cups water shopping list
- 2 cups eggplant, peeled and cubed shopping list
- 1-1/3 cups tomato paste shopping list
- 1-16 ounce box ziti shopping list
- 1-1/2 cups black olives, sliced shopping list
- 1 tablespoon dried oregano shopping list
- salt and pepper to taste shopping list
- 1-1/4 cups bread crumbs shopping list
- 1 cup parmesan cheese, grated or feta cheese crumbled shopping list

How to make it
- Heat oven to 350 degrees.
- In a large saucepan, brown meat in some olive oil.
- Add onion, garlic and pepper (if using). Cook until tender.
- Add water, eggplant and tomato paste.
- Heat to boiling.
- Reduce heat and simmer 10 minutes.
- While meat and vegetables are simmering, cook pasta in salted water for 6-8 minutes. Drain.
- Stir into meat mixture.
- Add 1 cup of olives, oregano, salt and pepper.
- Stir until evenly combined.
- Pour into a 9x13x2 inch baking dish.
- In a small bowl, stir together the bread crumbs, cheese and remaining olives.
- Sprinkle evenly over top of the pasta mixture.
- Bake at 350 degrees for 25-30 minutes or until casserole is hot and bubbly and evenly browned.
- Serve with some nice crusty bread.
