How to make it

  • Heat oven to 350 degrees.
  • In a large saucepan, brown meat in some olive oil.
  • Add onion, garlic and pepper (if using). Cook until tender.
  • Add water, eggplant and tomato paste.
  • Heat to boiling.
  • Reduce heat and simmer 10 minutes.
  • While meat and vegetables are simmering, cook pasta in salted water for 6-8 minutes. Drain.
  • Stir into meat mixture.
  • Add 1 cup of olives, oregano, salt and pepper.
  • Stir until evenly combined.
  • Pour into a 9x13x2 inch baking dish.
  • In a small bowl, stir together the bread crumbs, cheese and remaining olives.
  • Sprinkle evenly over top of the pasta mixture.
  • Bake at 350 degrees for 25-30 minutes or until casserole is hot and bubbly and evenly browned.
  • Serve with some nice crusty bread.

    This looks awesome,Jaie ! I love all things Mediterranian...think it might be good with ground lamb as well ?
