Ziti A Bit Mediterrini Recipe
Almost Mediterranean pasta. This is very good and very filling. Great with a good bread served on the side.

Ingredients
  • 1-1/2 pounds lean ground beef
  • 1 cup green pepper, chopped (optional)
  • 3/4 cup onion, chopped (I use a red onion)
  • 2 cloves garlic, minced
  • 4 cups water
  • 2 cups eggplant, peeled and cubed
  • 1-1/3 cups tomato paste
  • 1-16 ounce box ziti
  • 1-1/2 cups black olives, sliced
  • 1 tablespoon dried oregano
  • salt and pepper to taste
  • 1-1/4 cups bread crumbs
  • 1 cup parmesan cheese, grated or feta cheese crumbled
  • olive oil

Directions
  1. Heat oven to 350 degrees.
  2. In a large saucepan, brown meat in some olive oil.
  3. Add onion, garlic and pepper (if using). Cook until tender.
  4. Add water, eggplant and tomato paste.
  5. Heat to boiling.
  6. Reduce heat and simmer 10 minutes.
  7. While meat and vegetables are simmering, cook pasta in salted water for 6-8 minutes. Drain.
  8. Stir into meat mixture.
  9. Add 1 cup of olives, oregano, salt and pepper.
  10. Stir until evenly combined.
  11. Pour into a 9x13x2 inch baking dish.
  12. In a small bowl, stir together the bread crumbs, cheese and remaining olives.
  13. Sprinkle evenly over top of the pasta mixture.
  14. Bake at 350 degrees for 25-30 minutes or until casserole is hot and bubbly and evenly browned.
  15. Serve with some nice crusty bread.
