Creamy Au Gratin Potatoes

- 4 russet potatoes, sliced into ¼ inch slices shopping list
- 1 onion, diced and sauteed shopping list
- Salt and pepper to taste shopping list
- 4 tablespoons butter shopping list
- 4 tablespoons all purpose flour shopping list
- ½ teaspoon salt shopping list
- 2 cups milk shopping list
- 2 cups shredded cheddar cheese shopping list
How to make it
- 1. Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.
- 2. Peel and slice the potatoes, soak in water; set aside.
- 3. In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
- 4. Layer potatoes over bottom of the prepared casserole dish covering bottom. Sprinkle with salt and pepper; top with about 1 tablespoon of the sautéed onions, then cover with 1/3 of the cheese sauce; repeat layers, topping the casserole with cheese sauce. Cover with aluminum foil and bake
- 5. Bake 1 1/2 hours in the preheated oven. Removing foil for the last 30 minutes of baking time.
