One of my favorite cakes. It is easy to make & difficult to wait (to eat ).Enjoy.

Ingredients
  • 125g butter
  • 150g sugar
  • 2 medium eggs
  • 250g plain flour
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp candied peel/grated lemon rind
  • 1 tsp black currants
  • 1 tsp coconut powder
  • 2/3 tsp milk

Directions
  1. Heat oven to 180C/fan 160C/gas 4.
  2. Lightly butter muffin pans or paper cases.
  3. In a large bowl,beat butter until creamy.
  4. Add sugar and beat until fluffy and light.
  5. Beat in the eggs gradually.
  6. In another bowl,sift flour and baking powder.Mix salt,candied peel,currants and coconut in the flour.
  7. Fold the flour into the creamed mix.
  8. Stir in the milk ( the mixture should be of dripping consistancy).
  9. Spoon the mix into the prepared tin/paper cases and bake for 12-15 minutes.

I don't think I've ever heard of coconut powder - is it in the spice aisle? These little cakes sound heavenly!
