Easy Homemade Breakfast Sausage (By AR's Lee Fogle)

- 1 tablespoon plus 1 teaspoon dried sage shopping list
- 1 to 2 teaspoons Sea or Kosher salt shopping list
- 1 teaspoon ground black pepper shopping list
- 1 teaspoon onion powder shopping list
- ½ teaspoon garlic powder shopping list
- 1/3 teaspoon dried marjoram shopping list
- 1 tablespoon brown sugar shopping list
- ¼ to 1/3 teaspoon crushed red pepper flakes shopping list
- 1 pinch ground cloves shopping list
- 3 pounds ground pork, turkey, chicken etc… shopping list
How to make it
- 1. In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
- 2. Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
- 3. Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).
- Notes: So far I have used ground turkey for this sausage. I will try ground pork later using my own meat grinder and making it from pork loin.
- Freezes well too. I have made thin burger size patties sandwiched between waxed paper laid them out on a parchment lined baking sheet and froze them. then put them into a plastic re-sealable plastic bag. They cook up very quickly from frozen very easy! takes about 8 to 10 minutes in a skillet over medium heat.
- Notes: you can form these into patties using a burger patty press. I use about 1 1/4 ounces per patty. fairly thin but the larger ones are just too much.
