How to make it

  • 1. In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
  • 2. Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
  • 3. Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).
  • Notes: So far I have used ground turkey for this sausage. I will try ground pork later using my own meat grinder and making it from pork loin.
  • Freezes well too. I have made thin burger size patties sandwiched between waxed paper laid them out on a parchment lined baking sheet and froze them. then put them into a plastic re-sealable plastic bag. They cook up very quickly from frozen very easy! takes about 8 to 10 minutes in a skillet over medium heat.
  • Notes: you can form these into patties using a burger patty press. I use about 1 1/4 ounces per patty. fairly thin but the larger ones are just too much.

    Hi semi, cloves are interesting but looks great.
