How to make it

  • In a large pot or Dutch oven heat the oil on medium
  • Add the pancetta and cook down for about 5 minutes
  • Add the onions, peppers, celery, green chilies and garlic and cook for about ten minutes
  • Add all the seasonings and combine
  • Add the beer and diced tomatoes and bring to a boil and reduce to a simmer
  • Add the chocolate and allow to melt
  • Add the beef and maintain the simmer for 2-3 hours
