Smoked Brisket Chili

- 3 cups smoked beef brisket cut into 1/2" cubes, fat removed shopping list
- 3 oz pancetta, chopped shopping list
- 2 red bell peppers chopped shopping list
- 1 large red onion chopped shopping list
- 4 cloves of garlic diced shopping list
- 1 celery stalk, diced shopping list
- Juice of half a lime shopping list
- 1 small 4 oz can of diced green chilies shopping list
- 3 T canola oil shopping list
- 1 bottle good porter beer shopping list
- 6 squares (rectangles?) of unsweetened bakers chocolate shopping list
- 2 cans diced tomatoes shopping list
- 1 large can red kidney beans shopping list
- 1 tsp smoked paprika shopping list
- 3 T chili powder shopping list
- 1 tsp cumin shopping list
- 1 tsp oregano shopping list
- 1 tsp chipotle powder shopping list
- 2 tsp smoked sea salt (regular salt will work) shopping list
- 1/2 tsp coriander shopping list
How to make it
- In a large pot or Dutch oven heat the oil on medium
- Add the pancetta and cook down for about 5 minutes
- Add the onions, peppers, celery, green chilies and garlic and cook for about ten minutes
- Add all the seasonings and combine
- Add the beer and diced tomatoes and bring to a boil and reduce to a simmer
- Add the chocolate and allow to melt
- Add the beef and maintain the simmer for 2-3 hours
