Watercress Salad

- • A decent bunch of watercress. Picked and cleaned to make about six cups, loosely packed. shopping list
- • 1 small onion, sliced thin or chopped. shopping list
- • Two or three strips of bacon, chopped. shopping list
- • Salt and FG pepper to taste. shopping list
How to make it
- Prep the goodies: Clean the watercress, slice or chop the onion and chop the bacon.
- 1. Clean and pick the watercress. You want the leaves and tender stems. Save the rest for veggie stock.
- 2. Put the watercress in a large salad bowl.
- 3. Chop the bacon.
- 4. Slice or chop the onion.
- 5. Fry the bacon in a medium skillet; cast iron if possible.
- 6. When the bacon is half cooked, add the onion.
- 7. Cook, stirring often, until onion is translucent and bacon is done.
- 8. Drizzle the hot bacon mixture over the watercress, tossing the cress as you go.
- 9. Serve warm.
