How to make it

  • Wash and cut the eggplant.
  • Place on a paper towel lined plate and salt well.
  • Cover with another paper towel and leave for a min. of 30 mins.
  • Rinse and dry well.
  • Place the bread crumbs in a shallow bowl.
  • Salt and pepper the slices
  • Dip the eggplant, one slice at a time, into the egg mixture and shake off excess.
  • Press into the crumb mixture and press down lightly to adhere the crumbs to the egg plant.
  • Place on a parchment lined cooking sheet and spritz with the oil.
  • Bake for 15 mins, gently flip and spritz the other side.
  • Bake for an additional 15 mins.
  • Bake in a 400ยบ oven.
