Breaded And Baked Eggplant

- 1 lg. eggplant cut into 1/2 inch slices shopping list
- 1 1/2 cups Panko Crumbs, white or whole wheat shopping list
- salt and pepper to taste shopping list
- 1 tsp pecorino romano shopping list
- cooking spray, olive oil shopping list
- 1 lg. egg blended with 1 tbs water shopping list
How to make it
- Wash and cut the eggplant.
- Place on a paper towel lined plate and salt well.
- Cover with another paper towel and leave for a min. of 30 mins.
- Rinse and dry well.
- Place the bread crumbs in a shallow bowl.
- Salt and pepper the slices
- Dip the eggplant, one slice at a time, into the egg mixture and shake off excess.
- Press into the crumb mixture and press down lightly to adhere the crumbs to the egg plant.
- Place on a parchment lined cooking sheet and spritz with the oil.
- Bake for 15 mins, gently flip and spritz the other side.
- Bake for an additional 15 mins.
- Bake in a 400ยบ oven.
