Sorta Pot Roast

- 1 3-4 pound sirloin roast, all visible fat removed shopping list
- 4-5 large carrots, sliced thickly shopping list
- 2 med onions, cut in half and sliced shopping list
- 1 1/2 pounds cremini mushrooms, washed and quartered shopping list
- 1/2 cup white wine, whatever's in the fridge shopping list
- 1/8 tsp dried thyme shopping list
- 1/2 tsp parsley shopping list
- 4 cups low sodium beef broth shopping list
- 2 tbs olive oil. shopping list
- 2 cloves of garlic, micro planed or finely chopped shopping list
- 2 tbs corn starch shopping list
How to make it
- Preheat oven to 325ยบ
- Allow the roast to come to room temp. and pat dry.
- Salt and pepper the beef
- Heat the oil in a dutch oven and sear all sides of the beef, about 5 minutes per side.
- Remove the beef to a warm plate.
- Add the mushrooms to the pot and cook for about 3-5 minutes, until the mushrooms begin to brown.
- Add the onions and cook for another 2-3 minutes, stirring frequently.
- Add the garlic and cook until fragrant, about 30 seconds.
- Add the beef broth and bring to a low boil.
- Add the wine, parsley and thyme and carrots.
- Add the beef to the dutch oven, cover.
- Place in the oven for one hour.
- Remove the cover and cook for another hour.
- Remove 1 1/2 cups of onion, mushrooms and liquid, set aside.
- Return to pot to the oven and cook for the last hour, liquid should have decreased by 1/2.
- Place the reserved liquid, mushrooms and onion in a blender and pulse until well blended. Add the corn starch and mix well.
- Remove the beef from the pot and tent to keep warm.
- Place the pot on a med. high burner and slowly add the slurry, blend well.
- Bring to a gentle boil until mixture thickens.
- Note: Turn the roast over now and then so it doesn't dry out.

Delicious way to make a beef roast. I followed the recipe except i had no mushrooms so i added extra onion.I make my own broth so i used that. We all enjoyed it very much and i have very little left over from a 5 pound roast, but enough for another m...more
