Eggplant With Tomato Sauce

- 1 eggplant, washed and cut into one inch slices. shopping list
- 1 bottle of crushed tomatoes, 23 ounces shopping list
- 1/2 med. onion, finely chopped. About 1/2 cup shopping list
- 2 cloves garlic, micro planed or finely chopped shopping list
- 1 bay leaf shopping list
- 1/2 tsp each, basil, oregano and parsley shopping list
- salt, as needed shopping list
- olive oil, as needed shopping list
- Splash of red wine. shopping list
How to make it
- Wash and slice eggplant. Salt both sides well and place in a bowl. Leave for 30 mins.
- Add about 1 tbs of oil to a med pot and add onions. Cook, med. heat, stirring frequently until translucent.
- Add the garlic and cook until fragrant, about 30 seconds.
- Add the tomato sauce and bring to a simmer.
- Add the herbs and wine, stir and allow to simmer for 30-45 mins. Stirring occasionally.
- Preheat oven to 350ยบ
- Rinse the eggplant and dry well.
- Place the eggplant on a foil lined baking sheet.
- Brush with oil and season with salt and pepper.
- Bake for 10 mins.
- Gently turn the eggplant over and brush with oil. Bake for an additional 10 mins.
- Remove from oven and adjust the oven rack for broiling.
- Broil each side, on low, for 5 minutes. Watch carefully, they can go from brown to burned very quickly. See Photo
- Add a ladle of sauce to an oven proof dish, add a layer of eggplant. Repeat until all sauce and eggplant are in the dish.
- Bake for 20 mins.
- Optional. You can sprinkle with a 1/4 cup of Parmesan cheese before baking.

Very good and easy to make.Two things i did different was after i cut the egg plant i put it on a parchment lined cookies sheet sprinkled with sea salt and baked it 400 degrees for 20 minutes.I did not leave it in a bowl for 30 min.
