Basil And Bacon Wrapped Lamb Cutlets

- • 8-12 Lamb Cutlets, depending on size. shopping list
- • ¼ cup basil pesto. shopping list
- • 8-12 strips bacon. shopping list
How to make it
- 1. Trim any fat from cutlets. Spread pesto on cutlets and wrap bacon around them. Secure with toothpicks.
- 2. Grill on the barbecue for 4 to 5 minutes, turning often., don’t overcook.
- 3. Cover and leave to rest for 5 minutes before serving.
- Served this with a fresh green salad, mashed potatoes, topped with a dollop of sour cream and parmesan, sautéed zucchini and mint sauce. The wine was Chateau Cardboard.
