How to make it

  • 1. Trim any fat from cutlets. Spread pesto on cutlets and wrap bacon around them. Secure with toothpicks.
  • 2. Grill on the barbecue for 4 to 5 minutes, turning often., don’t overcook.
  • 3. Cover and leave to rest for 5 minutes before serving.
  • Served this with a fresh green salad, mashed potatoes, topped with a dollop of sour cream and parmesan, sautéed zucchini and mint sauce. The wine was Chateau Cardboard.

    I love lamb but I have never seen a lamb cutlet! I also have never had pesto or bacon on lamb! I am very curious. I may have to improvise.
