Manchego cheese and radish salad

- 10 cups of mixes lettuce greens, such as Bibb, Oak Leaf, Frisée, baby spinach and Red Leaf shopping list
- 4 radishes, ends trimmed shopping list
- 3 ounces manchego cheese, shaved shopping list
- 2 tablespoons minced shallots shopping list
- 2 tablespoons sherry wine vinegar shopping list
- 1 teaspoon Dijon mustard shopping list
- coarse salt and freshly ground pepper to taste shopping list
- 1/4 cup + 2 tablespoons extra-virgin olive oil shopping list
How to make it
- Wash and dry the lettuce greens thoroughly. Let air dry in a colander completely.
- In a large bowl, put the dry lettuce.
- Thinly slice the radishes and add to the lettuce.
- Add the Manchego cheese shavings.
- Cover with a damp paper towl and refrigerate.
- In a small bowl, whisk the shallots, vinegar, mustard, salt and pepper.
- Slowly add the olive oil and whisk well until combined. Refrigerate.
- When you're ready to serve, toss the salad with the vinaigrette.
- If desired, add some croutons on top.
