Doctor Bird Cake

- 3 cups all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon ground cinnamon shopping list
- 2 cups white sugar shopping list
- 1 teaspoon salt shopping list
- 2 cups banana, mashed (about 6 medium) shopping list
- 2/3 cups oil shopping list
- 1/3 cup applesauce shopping list
- 1 1/2 teaspoons vanilla extract shopping list
- 3 eggs (large or x-large) shopping list
- 8 ounces crushed pineapple, with juice shopping list
- 1/2 cup shredded coconut shopping list
- 1/2 cup raisins shopping list
How to make it
- 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
- 2. Into a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Make a well in the flour mixture.
- 3. In another bowl mix the mashed bananas, oil, applesauce, vanilla, eggs and pineapple with juice and coconut. Add the raisins to wet mixture.
- 4. Add wet mixture to dry and combine until there are no traces of flour.
- Pour batter into prepared pan.
- 5. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool on wire rack for 15 minutes then turn out of pan and allow to cool completely on wire rack.
