How to make it

  • Drain and rinse the beans under cold running water. Combine the beans, bay leaf, stock, red pepper flakes, salt and pepper in saucepan and bring the mixture to a boil. Reduce the heat to medium low. Chop the garlic and parsley while heating the oil in a frypan over high heat (I used medium high). Add the prawns and chopped garlic and cook for 2 to 4 minutes or until the prawns turn pink. Discard the bay leaf from the bean mixture and dish up the beans onto two plates. Cut the lemon in half and squeeze some juice over the prawns. Sprinkle with parsley and serve over the warm beans.
  • (I didn't use much of the broth as I didn't feel like a "soup" for lunch. The broth has a very good flavor to it.)
