How to make it

  • Remove the outer skin from the melon, cut in half and remove and discard the seeds;
  • Thinly slice the melon, arrange on a serving plate with the ham slices then sprinkle the rocket leaves over the top;
  • Using a potato peeler, thinly shave the pecorino cheese over the salad, drizzle with olive oil and season with a little salt and pepper;
  • Serve

    I've made this several times and what you see is what you get. Just a few fresh ingredients that come together with olive oil. The cantaloupe does lose some of it's sweetness and takes on a savory flavor from the olive oil and ham. It takes some getting used to if you are only used to eating plain cantaloupe, but it does grow on you. Thanks for sharing, Don!
