Trying to get caught up on photos and reviews. I made this one a few weeks ago and have made it several times. Bottom line, what you see is what you get. Fresh ingredients that come together with just the help of olive oil and salt ‘n pepper. It’s the type of dish DH and I found on the menus all throughout Northern Italy. Things that are made with only 3 or 4 simple ingredients and a bottle of olive oil in case you need seasoning. I used prosciutto because that’s all that is available in my area. The cantaloupe does lose some of its sweetness and takes on the flavors of the olive oil, ham, and salt. It takes some getting use to if you are only used to eating plain cantaloupe, but it does grow on you. Thanks for sharing, Don!

Oh, wow, that is absolutely beautiful and looks delicious. For those who don't know - rocket is the same as arugula which seems to me would go great with cantaloupe. It is a beautiful photo, DIZ. Top notch! :)
