  • 1. Dice all the vegetable and place in a large bowl.
  • 2. In a separate bowl, whisk together the oil and vinegar
  • 3. Combine all and refrigerate until ready to serve.

    Made this as is except i had no dill. Honestly i don't think it needed it. I toss my salads with olive oil and white vinegar, to my taste.
    To me the amount of oil and vinegar here is to much for my liking.
    I add and taste as i go, i don't measure. Weird i know but my mom was the same and i learned from her, she didn't measure either.
    we enjoyed it very much and it keeps in the fridge for a few days.
    At the end of it if you dunk a piece of crusty bread in the juice, heaven:)))

    Hi, Made a cut down version of this as an an accompaniament to my Burger fest - worked briliantly with both the burgers/pancetta and a wee sauce i created for the night - As it says on the tin - light, refreshing and very tasty - used A quality EVOO and Balsamic - makes a difference
