Banana Oatmeal Breakfast Muffin

- 2.5 cups old fashioned oats shopping list
- 1 cup plain low fat greek yogurt shopping list
- 2 eggs shopping list
- 1/2 cup honey (or maple syrup or brown rice syrup) shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 2 TBSP ground flax seed shopping list
- 1 tsp vanilla shopping list
- 2 ripe bananas shopping list
How to make it
- 1. Preheat oven to 350 degrees.
- Spray tin with non-stick cooking spray or line 12 standard (or 6 jumbo) muffin tins with silicone or foil liners.
- 2. Place the oats in the food processor and pulse for about 10 seconds. Add remaining ingredients to the food processor.
- 3. Process until everything is mixed together and oats are smooth.
- After processing if you wish to add chopped nuts (walnuts, pecans) or chocolate chips, use your judgement and stir those in.
- 4. Bake about 15-20 minutes (depending if standard or jumbo), tops begin to turn golden, and a toothpick inserted in the middle pulls out clean.
- 5. Let cool on wire rack for a few minutes. ENJOY!!

These are very good for flour less muffins, quite moist. I used lactose, gluten free oats, added some cinnamon as was suggested and i used maple syrup, but 1/4 cup not 1/2. I find that they are lacking something, just not sure what. I think it probab...more
