How to make it

  • 1. Preheat oven to 350 degrees.
  • Spray tin with non-stick cooking spray or line 12 standard (or 6 jumbo) muffin tins with silicone or foil liners.
  • 2. Place the oats in the food processor and pulse for about 10 seconds. Add remaining ingredients to the food processor.
  • 3. Process until everything is mixed together and oats are smooth.
  • After processing if you wish to add chopped nuts (walnuts, pecans) or chocolate chips, use your judgement and stir those in.
  • 4. Bake about 15-20 minutes (depending if standard or jumbo), tops begin to turn golden, and a toothpick inserted in the middle pulls out clean.
  • 5. Let cool on wire rack for a few minutes. ENJOY!!

    These are very good for flour less muffins, quite moist. I used lactose, gluten free oats, added some cinnamon as was suggested and i used maple syrup, but 1/4 cup not 1/2. I find that they are lacking something, just not sure what. I think it probably is the oats i used as they are quite tasteless, so next time i might add nutmeg.
    They are still tasty and moist. They did take 20 minutes to bake.
    Great recipe for dairy and gluten free.

    I greased the muffin tins, but for those that use Pam or other spray, read the ingredients on the can as they do contain wheat and soya products,
    I did find one that does not and that is Pan Extra Virgin Olive Oil spray.It does not contain wheat but does have soya.
    I am giving these muffins 5 stars as they are very good and not their fault that the oats are tasteless..
