Cheese Potato Pancakes

- 4 green onions, white and green sliced shopping list
- 2 lbs Russet potatoes, pealed and shredded shopping list
- 1/2 c. White cheddar, grated shopping list
- 1/2 c. Parmesan cheese, grated shopping list
- 1/2 tsp garlic powder shopping list
- 1 tsp salt shopping list
- Freshly grated pepper to taste shopping list
- 1/4 c. All purpose flour shopping list
- 2 eggs, beaten shopping list
- 1/4c. Oil, for frying shopping list
- Dipping Sauce shopping list
- 1/2 c sour cream shopping list
- 4 T chili salsa shopping list
How to make it
- Grate white cheddar, set aside
- Grate parmesan set aside in same bowl
- Shred potatoes onto a cheese cloth or linen cloth and squeeze to get rid of excess water, place into bowl with cheese, mix well.
- Add green onions, garlic powder, salt, pepper, mix well
- Add flour and eggs, mix well.
- In a frying pan, heat oil.
- Using a large serving spoon, add by scoopful, flattening each Pattie, and fry until nicely browned, flip and brown on second side
- Place on paper towels to drain
- Add chili to sour cream place in a small dish in center of serving tray and surround by potato pancakes. Sprinkle with additional green onions and serve
