How to make it

  • Prepare pans (grease and flour). Preheat oven to 350.
  • Whisk together dry ingredients, set aside.
  • Beat the eggs well, add the sugars and the rest of the wet ingredients and beat together.
  • Add 1/2 of the dry mixture to the wet ingredients and stir together. Add the remainder and mix just until all the ingredients are incorporated.
  • Optional: may add chopped nuts or raisins if desired.
  • ----Baking time will depend on the pans used. If using a quarter sheet and mini loaf pans, test at 30 minutes. The bigger loaf pans may take 50-60 minutes. Test for doneness. Let sit in pans on a rack to begin cooling for ten minutes. Then pop them out of the pans and let them finish cooling on the racks.

    Fantastic recipe! I ended up halving the recipe and making muffins. They baked for 25 minutes. It is light and airy, yet moist and chewy. You get the perfect balance of banana and pumpkin with a light hint of spice. I found the flavour was so much better the next day, so I suggest making them ahead of time.
