    Quite Delicious Banana Pumpkin Bread by Hinchess

    This is a great recipe! I wasn't sure how the pumpkin and banana would taste together. Banana has a tendency to dominate when paired with other fruits, but the earthy pumpkin was a perfect pairing. They blend together well and the hint of cinnamon and ginger compliment it perfectly! It's has a light airy texture, yet moist and chewy. A perfect quick bread texture.
    This recipe makes 2 loaves, 3 mini loaves or a 1/4 sheet cake (9x13" pan). I had 1/2 a can of pumpkin puree left so I halved the recipe and made muffins instead. The muffins baked for 25 minutes in my oven. The recipe is very easy to half as it's mostly full cups, tsp's etc.,except for the oil which is 3/4 cup (which halved is 6 tablespoons or 1/4 cup plus 2 T.)
    Like most pumpkin or spiced baked goods, the muffins tasted so much better the next day. So I recommend baking them a day ahead to develop the flavour.
    We found them to be light enough to eat as a snacking muffin/bread. But I could see it as a cake with a frosting like Peggy suggests. Or adding white chocolate or cinnamon baking chips for extra decadence. Or for a breakfast muffin/bread adding some raisins, pecans or walnuts would be great too!
    I will definitely make these again!

    Yum!!! I have never thought of pumpkin and banana together either Shona, and like you, I would have expected the banana to overpower. So glad it didn't! I wish my family liked pumpkin flavored things :( They are such party poopers lol. Gorgeous looking muffins :)

    Thanks Michelle! Aww, that's too bad they don't like pumpkin! I thought they liked those iced pumpkin cookies though? If there was ever a recipe to sneak pumpkin into it would be this one, the pumpkin and banana blend together to make it's own unique, subtle flavor. You could always frost a few for the picky! teehee ;)

    Bananas are usually used for a substitute for oil and/or butter in recipes. Apparently not in this recipe. I could see using the bananas for oil and a 1 for 1 fake sugar sub to make a nice low cal recipe.

    Points, if you use more banana in place of the oil than I recommend using a little less sugar. Unsweetened applesauce has fewer calories and less sugar than banana and shouldn't impart much flavor if you sub that for oil. :)
