Canadian Beaver Tails

- 3/4 cup warm milk (Body Temp.) shopping list

- 1 tsp. grated lemon zest (optional) shopping list

- 1 egg, room temp. shopping list
- 1/2 tsp vanilla extract shopping list

- Optional toppings: Nutella with banana or strawberries, Maple syrup, Lemon juice w/ powdered sugar or any type of glaze, chocolate syrup etc... The possibilities are endless! shopping list
How to make it
- In a large bowl stir together a spoonful of the sugar, yeast and milk-leave for 5 minutes, until it starts to foam.
- Add the flour, salt, nutmeg, lemon zest, oil or butter, egg, and vanilla and mix until you have a soft dough. Knead the dough (or use the dough hook on your stand mixer) for 7-8 minutes, until the dough is smooth and elastic.
- Place the dough in a lightly greased bowl, cover with a damp tea towel and let rise for an hour or two, until doubled in size. I like to put it in a cold oven with the light on.
- Divide the dough into 8 pieces and roll into an oval shape See Photo. Score a criss-cross pattern with a sharp paring knife See Photo. Place them on a well floured baking sheet, cover and let rise for another 1/2 hour. See Photo
- For the topping, mix the cinnamon and sugar together and place it on a large plate or pie plate.
- Heat an inch or two of canola oil in a medium pot or deep sided pan over medium-high heat until it reaches 350F. Pick up the beaver tails with two spatulas to make easier and so you don't stretch the dough too much. Cook the beaver tails one or two at a time and cook for about a minute on one side and 30-45 seconds on the other side. See Photo Making sure the oil stays around 350f, adjust the heat if needed.
- Transfer to a paper towel lined plate. You can dip them in the cinnamon sugar while still hot. Or sprinkle them with the lemon juice and sprinkle with cinnamon sugar. Or use any other topping you desire.
- Best eaten the day you make them, warm is best! :)
