Christmas Morning Open Faced Breakfast Sandwich Recipe

How to make it

  • Brown one side of bread under broiler, flip over and dot with butter, cook until golden brown
  • Place toast on plate
  • Top with 2 to 3 pieces of crisp bacon
  • In a frying pan, melt a little butter over med high
  • Whip or beat eggs and pour into pan with butter, lower heat and stir eggs until fluffy and cooked, season with salt and pepper
  • Divide eggs and place on top of toast
  • Add more butter (1-2 tablespoons) to pan and heat to.med high
  • Stir in onion mixuture and cook while stirring until tender, season lightly with salt and pepper
  • Top the eggs with the onion mixture and serve
