Chestnut Cheesecake

Base:
- 250 gr digestive biscuits shopping list
- 75 gr butter, melted shopping list
Cheesecake:
- 600 gr cream cheese, room temp shopping list
- 125 gr sugar shopping list
- 3 large eggs + 2 egg yolks, room temp shopping list
- 175 ml cream or sour cream shopping list
- 1 tsp vanilla shopping list
- 200 gr chestnut purée shopping list
Caramel topping:
- 50 gr salted butter shopping list
- 1 cup packed dark muscovado sugar shopping list
- 100 ml cream shopping list
- 200 gr boiled chestnuts shopping list
How to make it
Base:
- Process biscuits and butter to fine crumbs. Press the mixture into the bottom of a springform cake tin. Reserve.
Cheesecake:
- Process all ingredients until smooth and creamy. Pour the mix onto the springform tin and bake at 150C for about an hour. The centre should be wobbly.
Caramel topping:
- Melt butter, add sugar and stir until melted. When it starts to bubble add cream. Stir for about a min and add chestnuts. Let it cool down until it's time to decorate the cheesecake.
