Quick With A Kick Tomato Soup

- 2 cans diced fire roasted tomatoes shopping list
- 1 can crushed tomatoes shopping list
- 2 slices bacon, rough diced shopping list
- 1/2 onion, rough chopped shopping list
- 1 stalk celery, tough chopped shopping list
- 2 cloves garlic, minced shopping list
- 2 bouillon (chicken) cubes shopping list
- 1 can water ( using the tomato can) shopping list
- Tsp Zatarains garlic and herb spice shopping list
- 1/2 cup shredded Parmesan shopping list
- 1/2-1 cup heavy whipping cream shopping list
- 2 tablespoons butter shopping list
- Tsp olive oil shopping list
- 6 or more basil leaves, chopped shopping list
- Dash cracked black pepper shopping list
- Croutons ( I use day old French bread, cube and drizzle with olive oil and shopping list
- sprinkle with a light dusting of salt and pepper and a little Italian shopping list
- seasoning blend spice shopping list
How to make it
- In a large pot, heat butter and drizzle of olive oil over medium heat.
- Stir in bacon, onions, celery, garlic and cook about about 3 or 4 minutes
- or until bacon is rendered. Place in food processor and blend
- until well chopped. Return to pan, stir in tomatoes, water, spices, bouillon
- and cook over med heat for about ten minutes. Transfer in two batches to
- blender and blend until smooth. ( I place the first batch in a plastic
- container until the other batch is done that way I can just put left overs in
- that container! Once all is blended return to pot, stir in chopped basil,
- Parmesan and whipping cream. Heat a couple minutes over medium heat
- and ladle into bowls. Top with croutons, extra basil and or extra
- Parmesan! You can also sprinkle with parsle
