How to make it

  • In a large pot, heat butter and drizzle of olive oil over medium heat.
  • Stir in bacon, onions, celery, garlic and cook about about 3 or 4 minutes
  • or until bacon is rendered. Place in food processor and blend
  • until well chopped. Return to pan, stir in tomatoes, water, spices, bouillon
  • and cook over med heat for about ten minutes. Transfer in two batches to
  • blender and blend until smooth. ( I place the first batch in a plastic
  • container until the other batch is done that way I can just put left overs in
  • that container! Once all is blended return to pot, stir in chopped basil,
  • Parmesan and whipping cream. Heat a couple minutes over medium heat
  • and ladle into bowls. Top with croutons, extra basil and or extra
  • Parmesan! You can also sprinkle with parsle
