How to make it

  • BBQ/Oven to 400f/200c/Fan 180c/Gas 6
  • Mix the vinegar, honey, soy sauce, sugar and garlic together well in a large bowl;
  • Season to taste, add the chicken and, tossing everything together, coat the thighs evenly all over;
  • Cover and marinate in the fridge for a minimum 1 to 2 hours or, if possible, up to 24 hours;
  • Place the chicken in a lightly oiled roasting dish and cook, turning occasionally, for some 30 to 35 minutes or so or until the chicken is fully cooked through;
  • Can add more marinade if wish during cooking process;
  • Remove from the BBQ/oven, cover and, keeping warm, set aside to serve.
