How to make it

  • First coddle your egg yolk, here is the way I do it: https://www.afamilyfeast.com/how-to-coddle-an-egg/
  • it only takes about 5-10 minutes and is super easy!
  • Chop anchovies, garlic and shallot/onion very fine. Make a paste with it by chopping and rubbing your knife over it alternatively. Doesn't have to be completely smooth, a little chunky is fine See Photo. Put in a bowl and add the coddled egg yolk and stir together. Add in the next 5 ingredients (dijon-sugar). Whisk! Now slowly whisk in the olive oil, whisking until thick and creamy. Sprinkle with pepper, taste and add salt if needed. Pour on salad and enjoy!

    Anchovy Equivalents, Measures, and Substitutions

    1 anchovy fillet = 1/2 teaspoon anchovy paste.
    1 teaspoon mashed anchovies = 1 teaspoon anchovy paste, but remember the paste has added vinegar and spices and is milder in flavor.
    One 2-ounce can = 7 to 10 fillets
    One 2-ounce can = 3 Tablespoons mashed
    To make your own quick anchovy paste, simply mash anchovies to a paste consistency.

    Is the half lemon squozen? And should the pepper be white pepper to blend in with the ingredients?

    The anchovies should just come in a jar or tin with about 8-12 of them in there, and they are pretty cheap. They last for a long time in the fridge also. I have no idea how to use anchovy paste, I'm wondering if it's a stronger flavor and how much to use? You could be my guinea pig and try it out though...lol! It would be nice to add the alternative to the recipe!!

    Sounds like a perfect original Caesar dressing! I used to have one but I am afraid I lost it. I am SO happy you shared your recipe! Great instructions for the coddled egg as well.

    Where's the ""LOVE" button? I'd really like to try this and I think we'd love the flavours. I'm a bit worried about having to coddle an egg and I'm also worried about how many anchovies I'm going to have to buy. Could I use anchovy paste? I think I found that once. Very nice recipe Michelle!
