Aunt Jeannine's Caramel Raisin Cake

- 1 cup raisins shopping list
- 1 1/2 cups water shopping list
- 1 egg shopping list
- 1 1/2 cups flour shopping list
- 1 cup brown sugar shopping list
- 1 tsp. baking soda shopping list
- pinch of salt shopping list
- 1 tsp. vanilla shopping list
- 1/2 cup margarine shopping list
- caramel frosting shopping list
- 1 cup brown sugar shopping list
- 1/4 cup milk shopping list
- 5 tbsp. margarine shopping list
- 1 cup sifted icing sugar shopping list
How to make it
- Preheat oven to 350F.
- Boil raisins and water until only half a cup of liquid remains.
- Cool.
- Stir together baking soda, flour, and salt.
- Beat egg and then gradually beat in sugar and cooled raisins with liquid.
- Fold in flour mixture, then stir in vanilla.
- Lastly, add margarine.
- Bake in an 8 inch greased and floured pan for 30-35 minutes.
- Ice with the frosting.
- Frosting instructions:
- In saucepan place brown sugar, salt, milk and butter.
- Bring slowly to a boiling point, stirring to dissolve sugar.
- Cool and then add icing sugar.
- Beat well.
