How to make it

  • In a bowl, mix flour, sugar, almonds (if you're using them), baking soda, baking powder, salt, and cinnamon.
  • In a separate bowl, blend the honey, water, and almond extract.
  • Add the wet mix to the dry mix until well-blended.
  • Turn the dough out on a floured surface and lightly knead if necessary (it really shouldn't be)
  • Divide the dough in half and with each half form it into a log, with the approximate dimentions of 12 inches long, 2 inches wide, 3/4 inches high.
  • Place the logs on a nonstick baking sheet (or one coated with nonstick spray) and bake for 30 minutes in a preheated 350 degree oven.
  • Remove from the oven and cool for 10 minutes
  • Place each log on a cutting board and with a serrated knife cut into 1/2 wide slices on the diagonal
  • Place the slices on the baking sheet and bake for another 15 minutes.
  • Remove from oven and place on a wire rack to cool
