Spinach Bacon Stuffed Onions

- 3 medium yellow onions shopping list
- 10 ounce package frozen spinach cooked and drained shopping list
- 1/2 cup cooked bacon diced shopping list
- 3 ounce package cream cheese softened shopping list
- 6 tablespoons parmesan cheese divided shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Peel onions and cut in halves crosswise.
- Place in large kettle and cover with boiling water.
- Return to boil then simmer 15 minutes.
- Remove hearts from onions leaving a good shell.
- Chop hearts of onions then mix with spinach, bacon, cream cheese and 5 tablespoons parmesan. Fill onions with spinach mixture then sprinkle remaining Parmesan over top.
- Bake at 350 for 25 minutes.
