Issys Crunchy Fried Chicken

- 10-12 pieces of chicken (thighs & drumsticks) shopping list
- 1 1/2 cups bread crumbs (plain or seasoned) shopping list
- 1 cup Instant Mashed potato flakes shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 2 eggs shopping list
- 2 TBS butter or Margerine shopping list
- cooking oil shopping list
How to make it
- First I clean the chicken then place it in a pot and boil it until it is almost done, aprox. time about 10-15 minutes. drain and set aside to cool down.
- In a bowl I combine the bread crumbs, potato flakes, salt and pepper and any other season you may want to add (mix well). In another bowl combine the eggs (scrambled) with the butter.
- Heat up your oil (I like to use Canola best)
- Once the chicken is cool to the touch soak it in the eggs and butter until covered completely, then transfer to the bread crumbs and coat evenly. After you coat all the chicken fry up to 3 or 4 pieces at a time for a few minutes or until desired crispness and color.
- Drain on paper towels then serve.
