How to make it

  • Mash Tofu into a chunky texture, similar to that of egg salad.
  • Add Mayo to desired consistency.
  • Stir in remaining ingredients.
  • Serve on bread or pitas, with lettuce, tomato, cheese or veg.
  • cheese if desired.
  • It really needs to be Dijon mustard for the taste to be right.

    Hey, this looks good! I frequently make a similar kind of salad, with a few additional ingredients. I don't know if you know or like nutritional yeast, but I like to add a few tablespoons of it to my eggless salad because I like the weird sort of egg-like or cheese-like flavor it imparts. It's also high in B vitamins. I also chop up carrots and red onions really fine in addition to the celery, and sometimes add curry powder, raisins, and cashews, which makes kind of a curried eggless salad. I usually don't use mustard -- because I have my own allergy to wine, and nothing really compares to Dijon. :)
