How to make it

  • Whisk all the dressing ingredients together and allow the flavors ot blend. (can be blended if you want a smooth sauce)
  • Toss warm potatoes with the dipping sauce and allow to cool.
  • Add remaining ingredients and stir gently to combine.
  • Serve on bed of bibb lettuce, pass extra dipping sauce on side.
  • I like to garnish poached shrimp, roasted beets, green onions, green peppers, cherry tomatoes. It makes a filling main course salad or it is good all by itself.

    The dipping sauce, oh, the dipping sauce!

    I made this with sour cream and without (for the lactose intolerant in the group). I'm looking forward to trying the leftovers tomorrow after the ingredients have really infused.
