A great banana-bread inspired cake with sweet dates and mashed plantains in amongst traditional Jamaican spices. Great as a single layer cake or use 2 cake pans and sandwich a tropical jam in between!

Ingredients
  • 1 ½ cups whole spelt flour
  • ½ cup oat flour
  • 3 tbsp. corn starch
  • 1 ½ tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • ¼ tsp. nutmeg
  • ¼ tsp. cloves
  • 4 ripe, peeled plantains
  • ¾ cup dates, pitted

Directions
  1. Preheat oven to 350F.
  2. Mix dry ingredients thoroughly.
  3. Break plantains into pieces; add to blender along with the dates and about ¼ cup water.
  4. Run the blender at high speed until the contents are smooth.
  5. Pour the date mixture into the flour and blend well, adding water if required. Immediately pour batter into a greased 9 x 13” pan or 2 lightly oiled 9” baking pans.
  6. Bake 25 minutes. Cool completely in tins.
