Ingredients
  • 3/4 cup whole wheat flour
  • 1/4 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 egg whites
  • 1/3 cup sugar
  • 1/3 cup packed brown sugar
  • 1/3 cup canola oil
  • 1 tsp vanilla
  • 1 cup shredded zucchini, UNPEELED
  • 1/2 cup crushed pineapple, in it's own juice
  • 1/3 cup raisins
  • 1/3 cup walnuts or pecans

Directions
  1. Preheat oven to 350
  2. Coat a 9 x 5 x 3 loaf pan with nonstick cooking spray
  3. In a large bowl combine the whole wheat flour, all purpose flour, baking soda, baking powder and cinnamon & nutmeg
  4. Add the egg whites, sugar, oil & vanilla
  5. Combine thoroughly
  6. Fold in zucchini, pineapple (with juice), raisins and nuts.
  7. Pour into prepared pan
  8. Bake 40-45 minutes or until toothpick inserted comes out clean from center of pan
  9. Let cool in pan

This looks yummy!My better half is diabetic and I can not wait to try this with stevia.Stevia is a natural chinese herb and very sweet so i use as the last ingred. to taste.
