How to make it

  • Preheat oven to 350
  • Coat a 9 x 5 x 3 loaf pan with nonstick cooking spray
  • In a large bowl combine the whole wheat flour, all purpose flour, baking soda, baking powder and cinnamon & nutmeg
  • Add the egg whites, sugar, oil & vanilla
  • Combine thoroughly
  • Fold in zucchini, pineapple (with juice), raisins and nuts.
  • Pour into prepared pan
  • Bake 40-45 minutes or until toothpick inserted comes out clean from center of pan
  • Let cool in pan

    sounds pretty good, mimimal oil and sugar, thats what i like.
    i think i tried making a carrot zucchini and pineapple cake once, but it sucked. came out really really hard and not even the birds would eat it.

    This looks yummy!My better half is diabetic and I can not wait to try this with stevia.Stevia is a natural chinese herb and very sweet so i use as the last ingred. to taste.
