zUCCHINI BREAD FROM DLIFE

- 3/4 cup whole wheat flour shopping list
- 1/4 cup all purpose flour shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp baking powder shopping list
- 2 tsp cinnamon shopping list
- 1 tsp nutmeg shopping list
- 2 egg whites shopping list
- 1/3 cup sugar shopping list
- 1/3 cup packed brown sugar shopping list
- 1/3 cup canola oil shopping list
- 1 tsp vanilla shopping list
- 1 cup shredded zucchini, UNPEELED shopping list
- 1/2 cup crushed pineapple, in it's own juice shopping list
- 1/3 cup raisins shopping list
- 1/3 cup walnuts or pecans shopping list
How to make it
- Preheat oven to 350
- Coat a 9 x 5 x 3 loaf pan with nonstick cooking spray
- In a large bowl combine the whole wheat flour, all purpose flour, baking soda, baking powder and cinnamon & nutmeg
- Add the egg whites, sugar, oil & vanilla
- Combine thoroughly
- Fold in zucchini, pineapple (with juice), raisins and nuts.
- Pour into prepared pan
- Bake 40-45 minutes or until toothpick inserted comes out clean from center of pan
- Let cool in pan

This looks yummy!My better half is diabetic and I can not wait to try this with stevia.Stevia is a natural chinese herb and very sweet so i use as the last ingred. to taste.
