It aint easy being green chicken salad

- Dressing: shopping list
- 1/2 avocado, pitted and peeled shopping list
- 1/2 cup sour cream shopping list
- 2 tablespoons fresh lime juice shopping list
- 1/2 teaspoon minced garlic, more if you really like garlic shopping list
- salt and pepper to taste shopping list
- Salad: shopping list
- 2 cups cooked chicken breast, coarsely shredded shopping list
- 2 finely chopped green onions shopping list
- 1/2 teaspoon seeded and finely chopped serrano chilies shopping list
- 1/2 pound peeled jicama cut into matchstick pieces, optional shopping list
- cherry tomatoes, halved shopping list
- fresh cilantro, optional shopping list
- 6 cups mixed greens, your choice shopping list
How to make it
- In a blender or food processor, combine the dressing ingredients.
- Blend until smooth.
- In a large bowl, combine chicken, jicama, onions, chilies, and cherry tomato halves. Also add cilantro, if using.
- Toss to mix well.
- Add dressing and toss again.
- Divide the greens among 4 plates.
- Top with chicken mixture and serve.
- Serve with crusty bread and corn-on-the-cob.
