How to make it

  • In a blender or food processor, combine the dressing ingredients.
  • Blend until smooth.
  • In a large bowl, combine chicken, jicama, onions, chilies, and cherry tomato halves. Also add cilantro, if using.
  • Toss to mix well.
  • Add dressing and toss again.
  • Divide the greens among 4 plates.
  • Top with chicken mixture and serve.
  • Serve with crusty bread and corn-on-the-cob.
