Ingredients
  • 20 ounce can pineapple chunks
  • 1 pound ground lean beef
  • 1 egg
  • 2 slices fresh bread crumbled
  • 1 tablespoon instant minced onions
  • 1 teaspoon salt
  • 1/8 teaspoon cloves
  • 1/8 teaspoon all spice
  • 2 tablespoons reserved pineapple syrup
  • Sauce:
  • 1/3 cup reserved pineapple syrup
  • 1/2 cup ketchup
  • 1/3 cup brown sugar packed

Directions
  1. Drain pineapple well and reserve syrup.
  2. Mix together beef, egg, bread crumbs, onion, salt, cloves, all spice and the syrup.
  3. Mold small amount of meat mixture around each pineapple chunk.
  4. Place meat balls in a baking dish and cover with wax paper.
  5. Microwave on high for 4 minutes then pour off meat juices.
  6. To make sauce stir together syrup, ketchup and brown sugar.
  7. Pour over drained meatballs then microwave on high for 5 minutes.
  8. Serve with rice or noodles or great as an appetizer.
