Ingredients
  • 1 package chicken rice a roni
  • 1 package fried rice with almonds rice a roni
  • 2 jars marinated artichoke hearts drained and save liquid
  • 4 green onions chopped
  • 2 cans sliced water chestnuts
  • 2 jars green olives halved and drained
  • Dressing:
  • 2/3 cup mayonnaise
  • Liquid from one jar of artichokes
  • 1/2 teaspoon curry

Directions
  1. Cook both packages of rice according to directions then let cool.
  2. Mix rice and remaining ingredients together except liquid from
  3. artichokes. Mix together dressing and add to cooked cooled rice
  4. mixture. Toss well and serve.

I have made a variation of this recipe before and it is just "to die for" delicious. I've taken it numerous times to family functions, Thanksgiving lunch at work etc. and it is always a HUGE hit.

Alterations


Instead of the fried rice with almonds, I brown a package of slivered almonds and add to a large box of chicken rice-a-roni. I also use black olives instead of green and I usually add extra artichokes. No matter how you make it, it's fabulous!
