  • Add the brown sugar, evaporated milk, and butter to a heavy saucepan. Cook over medium-high heat, stirring continually, until the mixture comes to boil. Cook for one minute longer.
  • Remove from heat, stir in peanut butter, quick oats, and vanilla. Stir until the mixture begins to cool.
  • Drop the cookies by the spoonful onto a nonstick baking sheet or waxed paper. Cool completely in the refrigerator.

    I did a search on how to make homemade evaporated milk and found this maybe it will help you.

    usually just make the powered milk with regular milk instead of water (makes it twice as thick, but richer than if you just make it with water).

    I learned to do this from a pastry chef who worked with my dad. His wife had to be on a fat restricted diet & this was before there was any non-fat evaporated milk around, so he used non-fat milk and non-fat powdered milk. It really does work well and I don't ever have to remember to buy an extra ingredients when I'm baking.

    I love evaporated milk and would use it in a heartbeat over anything else. But I live on a farm 20 miles from town and don't have any evap milk on hand. Besides flavor, is there any reason why I couldn't sub 2% milk? I'd love to make these tomorrow!
