This is a chewy, peanut butter-rich cookie made with oats. Both kids and adults will like this.
Again, this is a stovetop recipe. From ingredients to cookies on the sheet took us about ten minutes

I used crunchy peanut butter and added about 1/3 c golden raisins and 1 t cinnamon. Next time I will use less sugar but will add a little more milk or a little less oatmeal. I think 2 C sugar is too much, but they are really good, just too sweet.

I love evaporated milk and would use it in a heartbeat over anything else. But I live on a farm 20 miles from town and don't have any evap milk on hand. Besides flavor, is there any reason why I couldn't sub 2% milk? I'd love to make these tomorrow!

usually just make the powered milk with regular milk instead of water (makes it twice as thick, but richer than if you just make it with water).
I learned to do this from a pastry chef who worked with my dad. His wife had to be on a fat restricted diet & this was before there was any non-fat evaporated milk around, so he used non-fat milk and non-fat powdered milk. It really does work well and I don't ever have to remember to buy an extra ingredients when I'm baking.
