This recpes I have used on the mackerel a buddy sent me it turned out really nice......lodes of flavor

Ingredients
  • 5 lbs king mackerel
  • 1 cup olive oil
  • Marinade:
  • 2 qts water
  • 1/2 cup sea salt (or pickling salt)
  • 1 cup brown sugar
  • 1 cup honey

Directions
  1. Combine marinade ingredients
  2. Place fish and marinade in covered container and marinate in refrigerator for 36 hours.
  3. Remove fish from marinade and pat dry
  4. Coat fish thoroughly with olive oil
  5. Place fish in smoker at 175° for 8 hours
  6. Serve as appetizers or snacks
