Jammin Jerk Chicken Recipe

Ingredients

4 large bone-in, skin-on chicken breast halves

1/2 cup vegetable oil

1 cup cider vinegar

1/4 teaspoon ground white pepper

1 large egg

2 tablespoons Dry Jerk Seasoning, plus more to taste

Dry Jerk Seasoning:

1 tablespoon onion flakes

1 tablespoon onion powder

2 teaspoons ground dried thyme

2 teaspoons salt

1 teaspoon ground Jamaican allspice

1/4 teaspoon ground nutmeg

1/ teaspoon ground cinnamon

2 teaspoons sugar

1 teaspoon coarsely ground black pepper

1 teaspoon cayenne pepper

2 teaspoons dried chives

Directions

Mix up the dry jerk seasoning first. Store in a jar with a tight closed lid. (Any leftovers will keep for over a month)

Prepare a low fire in a charcoal grill. For a gas grill, preheat it to 225°-275°.

In a blender, combine the oil, vinegar, 2 tablespoons of seasoning, white pepper and egg. Combine well.

Place the chicken on the grill, skin side down, and grill for 20 minutes,basting frequently with the sauce mixture.

Repeat on the second side, grilling for 20 minutes or until the juices run clear when the meat is pierced.

For even more flavor...sprinkle on some more dry seasoning after cooking.

Serve with corn-on-the-cob and side salads for a perfect picnic meal!!
