Jammin Jerk Chicken

- 4 large bone-in, skin-on chicken breast halves shopping list
- 1/2 cup vegetable oil shopping list
- 1 cup cider vinegar shopping list
- 1/4 teaspoon ground white pepper shopping list
- 1 large egg shopping list
- 2 tablespoons Dry Jerk seasoning, plus more to taste shopping list

- 1 tablespoon onion flakes shopping list
- 1 tablespoon onion powder shopping list
- 2 teaspoons ground dried thyme shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon ground Jamaican allspice shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 1/ teaspoon ground cinnamon shopping list
- 2 teaspoons sugar shopping list
- 1 teaspoon coarsely ground black pepper shopping list
- 1 teaspoon cayenne pepper shopping list
- 2 teaspoons dried chives shopping list
How to make it
- Mix up the dry jerk seasoning first. Store in a jar with a tight closed lid. (Any leftovers will keep for over a month)
- Prepare a low fire in a charcoal grill. For a gas grill, preheat it to 225°-275°.
- In a blender, combine the oil, vinegar, 2 tablespoons of seasoning, white pepper and egg. Combine well.
- Place the chicken on the grill, skin side down, and grill for 20 minutes,basting frequently with the sauce mixture.
- Repeat on the second side, grilling for 20 minutes or until the juices run clear when the meat is pierced.
- For even more flavor...sprinkle on some more dry seasoning after cooking.
- Serve with corn-on-the-cob and side salads for a perfect picnic meal!!
