How to make it

  • Mix up the dry jerk seasoning first. Store in a jar with a tight closed lid. (Any leftovers will keep for over a month)
  • Prepare a low fire in a charcoal grill. For a gas grill, preheat it to 225°-275°.
  • In a blender, combine the oil, vinegar, 2 tablespoons of seasoning, white pepper and egg. Combine well.
  • Place the chicken on the grill, skin side down, and grill for 20 minutes,basting frequently with the sauce mixture.
  • Repeat on the second side, grilling for 20 minutes or until the juices run clear when the meat is pierced.
  • For even more flavor...sprinkle on some more dry seasoning after cooking.
  • Serve with corn-on-the-cob and side salads for a perfect picnic meal!!

    Hmmm, sounds good this end too, am not familiar with "Jerk" so am pleased to get the recipe for the jerk spice, thanks will give this a go this weekend
