How to make it

  • Place stew meat and flour in a storage bag and shake to coat.
  • Heat oil in an oven-safe 4 qt. pot over medium-high heat.
  • Brown flour coated beef.
  • Reduce heat to medium.
  • Add carrots, onions, potato and garlic and cook until vegetables are soft.
  • Add stock, tomatoes (with liquid), beans, corn and spices.
  • Mix well.
  • Cover and simmer on low for 30 min.
  • Remove cover and spoon on corn topping.
  • Bake in a hot 400 F oven for 25-30 min.
  • Corn topping:
  • Mix dry ingredients.
  • Make a well in the center and add water and oil.
  • Mix until just blended.
  • Let stand 2 minutes before spreading.
