Southwest Beef Pot Pie

- 1 lb. lean stew meat shopping list
- 1/4 C. flour shopping list
- 1 (15oz) can diced tomatoes shopping list
- 2 carrots, diced shopping list
- 1 onion, diced shopping list
- 1 baking potato, peeled and diced shopping list
- 2 cloves garlic, minced shopping list
- 1 C. beef stock shopping list
- 1 can black beans, drained and rinsed shopping list
- 1 C. frozen corn kernels shopping list
- 2 tsp. cumin shopping list
- 1/2 tsp. red pepper flakes shopping list
- 1 tsp. dried thyme shopping list
- 2 tsp. worcestershire sauce shopping list
- black pepper to taste shopping list
- corn Topping: shopping list
- 2/3 C. all-purpose flour shopping list
- 1/2 C. yellow corn meal shopping list
- 1 1/2 Tbs. sugar shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 3/4 C. water shopping list
- 2 Tbs. vegetable oil shopping list
How to make it
- Place stew meat and flour in a storage bag and shake to coat.
- Heat oil in an oven-safe 4 qt. pot over medium-high heat.
- Brown flour coated beef.
- Reduce heat to medium.
- Add carrots, onions, potato and garlic and cook until vegetables are soft.
- Add stock, tomatoes (with liquid), beans, corn and spices.
- Mix well.
- Cover and simmer on low for 30 min.
- Remove cover and spoon on corn topping.
- Bake in a hot 400 F oven for 25-30 min.
- Corn topping:
- Mix dry ingredients.
- Make a well in the center and add water and oil.
- Mix until just blended.
- Let stand 2 minutes before spreading.
