Tomato Rice

- 1/4 c olive oil shopping list
- 2 tbsp butter or bacon drippings shopping list
- 1 large yellow onion, peeled and chopped shopping list
- 2 cloves garlic peeled and chopped shopping list
- 2-3 large tomatoes, peeled, seeded, and chopped shopping list
- 3 cups beef or chicken broth shopping list
- 2 cups long grain rice shopping list
- salt and pepper to taste shopping list
- chopped cilantro (for garnish / optional) shopping list
How to make it
- Heat the oil and butter in a large saucepan over moderate heat.
- Add the onion and garlic and cook 5 minutes, until soft but not
- brown.
- Add the tomatoes, cover and simmer for 15 minutes.
- Add the broth and bring to a boil.
- Stir in the rice, salt, and pepper, and cover.
- Reduce the heat to a simmer and cook covered until the rice is done, about 20 minutes.
- Fluff with a fork and garnish with chopped cilantro if desired.

very good. i added a little tomato paste, and some greated parm on top of each serving, it was really good, will definetly make again.
