Sole With Mushroom Sauce

- 1 1/2 lb (750 g) fresh sole fillets shopping list
- 1 can (10 oz/284 mL) Campbell’s condensed cream of mushroom soup or 50% Less Fat Cream of Mushroom Soup shopping list
- 1/2 cup (125 mL) grated cheddar cheese shopping list
- 1/4 cup (50 mL) dry sherry shopping list
- 3 tbsp (50 mL) dry bread crumbs shopping list
- 1 tbsp (15 mL) margarine or butter, melted shopping list
- 6 cups (1.5 L) oven-baked potato wedges shopping list
How to make it
- Place fillets in a lightly greased 2 qt (2 L) shallow baking dish.
- Combine soup, cheese and sherry; spread evenly over fillets. Mix bread crumbs and margarine and sprinkle over fillets.
- Bake in preheated 350° F (180° C) oven until fish is cooked through – about 30 minutes. Serve with potato wedges or rice.
