It was a recipe that was handed down from my grandmother to my mother. She thought we would like it, so we tried it and loved it!

Ingredients
  • 1 1/2 lb (750 g) fresh sole fillets
  • 1 can (10 oz/284 mL) Campbell’s Condensed Cream of Mushroom Soup or 50% Less Fat Cream of Mushroom Soup
  • 1/2 cup (125 mL) grated Cheddar cheese
  • 1/4 cup (50 mL) dry sherry
  • 3 tbsp (50 mL) dry bread crumbs
  • 1 tbsp (15 mL) margarine or butter, melted
  • 6 cups (1.5 L) oven-baked potato wedges

Directions
  1. Place fillets in a lightly greased 2 qt (2 L) shallow baking dish.
  2. Combine soup, cheese and sherry; spread evenly over fillets. Mix bread crumbs and margarine and sprinkle over fillets.
  3. Bake in preheated 350° F (180° C) oven until fish is cooked through – about 30 minutes. Serve with potato wedges or rice.
