Summer Stuffed Tomatoes Recipe
AGAIN, SUMMER ONLY! Use fresh garden or farm tomatoes. Use your favorite salad stuffing, seafood, egg or meat. Serve with bread and a side salad.

Ingredients
  • Large, fresh in season tomatoes
  • S&P, I prefer Crazy Janes Mixed up Salt
  • Main Salad stuffing of your choice; Chicken, Turkey,Ham, Tuna, Salmon, Lobster, Egg, or Meat/ Anti-pasta Salad. Use homemade or store bought salad.

Directions
  1. Cut out the stem and core of the tomato. Slice towards the bottom, about halfway, in 1/2" cuts around the tomato.
  2. With a spoon, scoop out seeds and such, keeping tomato intact, as well as possible. Place tomato over a paper plate, and let drain.
  3. Place tomato, right side up, on/ or surrounded by a layer of lettuce.
  4. Spread cuts out, Sprinkle w/ S&P, and stuff w/ desired main salad
  5. Serve w/ bread and a side green salad.
