Vegan Mac And Cheese Recipe

This is a wonderful vegan version of Mac and Cheese. It has sort of an alfredo taste to it. My children and all their non-vegan friends LOVE it.

Ingredients
- 1 lb noodles (I prefer spiral because the sauce sticks to them so well)
- 2 cloves garlic
- half of an onion diced into very small pieces
- 1 cup nutritional yeast (a yellow cheese like flakes that can be found in most "Whole Foods" stores - DO NOT BE CONFUSED WITH BREAD YEAST - THEY ARE TOTALLY DIFFERENT)
- 1 cup soymilk
- 2 Tbsp margarine
- 1 tsp wet mustard
- 2 pinches chopped basil
- 1 tsp salt
- 1/2 tsp pepper
- oil to coat pan
Directions
- Cook pasta in boiling water, following directions on the box.
- Dice the onion and garlic.
- Lightly cover the bottom of a small pot with oil and fry the diced onion and garlic at medium-low until onion is transparent.
- Pour the nutritional yeast and soymilk into the pot.
- Add the rest of the ingredients, somewhat in the order listed above, while mixing the contents at low heat.
- Continue heating the sauce for a couple minutes, stirring often.
- When pasta is done, strain it and mix with the sauce.
- Enjoy!

Thanks for the recipe, my 2 year old can not have dairy and I don't eat meat, so we are always looking for 'kid friendly' meals. Can't wait to try it:)
