Im Not Blue Blueberry Cake Recipe
This is a really easy cake to make and goes great with a cup of coffee! I remember my grammy making it often for her social clubs.

Ingredients
  • Cake:
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup milk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 salt
  • 2 cups blueberries, well cleaned and drained
  • Topping:
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon

Directions
  1. In a bowl, cream together sugar, oil and egg until lemon-colored.
  2. Stir in milk.
  3. In a separate bowl, sift together flour, baking powder and salt.
  4. Stir into the creamed mixture.
  5. Gently fold in the blueberries.
  6. Spread batter into a greased and floured 9x9-inch square baking pan. Sprinkle with topping.
  7. Topping;
  8. Melt butter. Stir in sugar, flour and cinnamon. Crumble over the cake batter.
  9. Bake at 375° for 45-50 minutes.
  10. Serve warm.
