Ingredients
  • 4 oz. cinnamon (or cinnamon raisin) bread
  • 1 egg + 1 egg yolk
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tbs. brown sugar
  • 1-2 cups boiling water

Directions
  1. Pre-heat oven to 350 degrees.
  2. Cut (or rip) bread into small pieces, distribute between 4 half-cup ramekins.
  3. Beat egg and yolk in a medium bowl until slightly thickened.
  4. Combine milk, cream and brown sugar in a saucepan, heat over medium low heat until bubbles rise around the edges, stirring occasionally.
  5. Slowly drizzle milk into eggs while stirring continuously.
  6. Pour custard over bread in ramekins.
  7. Place ramekins in baking dish, add enough boiling water to come halfway up the cups.
  8. Bake in the oven for approximately 40 minutes until the custard is set.
