Ingredients
  • 28 oz (800 g) peeled and seeded pumpkin (or any firm-fleshed winter squash), cut in small cubes
  • 4 garlic cloves, finely chopped
  • 1 small bunch parsley, finely chopped
  • 1 Tbs tresh thyme leaves
  • 1.7 oz (50 g) all purpose flour
  • 1.7 oz (50 g) gruyere, grated
  • salt
  • black pepper
  • nutmeg
  • 4 Tbs breadcrumbs
  • 1/2 cup (125 ml) extra-virgin olive oil

Directions
  1. Position a rack in the lower part of the oven.
  2. Preheat oven to 350º F (180º C).
  3. Mix parsley, garlic, thyme, flour, and gruyere in a big bowl.
  4. Add pumpkin and mix well.
  5. Season with salt, pepper and nutmeg.
  6. Coat a gratin pan with olive oil, fill with pumpkin mixture, sprinkle with the breadcrumbs.
  7. Drizzle with the olive oil.
  8. Bake for 60 min.
