Tamarind Water Recipe
If you love tamarinds... this recipe is for you. You can prepare less than portions here. This is very Caribbean and popular in Mexico ( named Agua de tamarindo)

Ingredients
  • 1/2 pound tamarinds
  • 4 quarts water
  • 1 cup orange juice, fresh, frozen or canned
  • 2 cups fresh pineapple crushed
  • 1 thick cinnamon stick
  • 6 whole cloves, slightly bruised
  • 2 cups sugar

Directions
  1. Wash and peel tamarinds.
  2. Add them to 4 quarts of water and the rest of ingredients.
  3. Place all in a large earthenware jug; cover and let stand 72 hours in refrigerator.
  4. Strain and add more sugar if necessary.
  5. Serve very cold .
