Baked Oatmeal Recipe
Hearty oatmeal you bake in the oven, really easy and makes a great breakfast and dish for guests. Whole grains make it healthier. Butter makes it taste good but can be made vegan.

Ingredients
  • 2.5 cups thick cut oatmeal
  • 1/4 cup steel cut oatmeal
  • 1/4 cup oat bran
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 cups milk
  • 1 egg, beaten
  • 1/4 cup butter, melted
  • 1 cup dried fruit (apples, blueberries, cranberries, raisins)
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup unsweetened coconut (optional)

Directions
  1. Preheat oven to 400
  2. Combine dry ingredients in a bowl (oatmeal through cinnamon)
  3. Combine wet ingredients (milk through butter)
  4. Barely mix wet ingredients into dry ingredients
  5. Place mix into a casserole dish and place in over for 20 minutes
  6. After 20 minutes, remove dish from oven and mix in dried fruit (and nuts and/or coconut if using)
  7. Bake for another 20 minutes
  8. This tastes the best when served with milk!
  9. Variations: replace milk with unsweetened soy milk and butter with oil for a vegan version. Add a 1/2 tsp of vanilla with the wet ingredients. Try cardamon or nutmeg with the cinnamon.
