Baked Oatmeal

- 2.5 cups thick cut oatmeal shopping list
- 1/4 cup steel cut oatmeal shopping list
- 1/4 cup oat bran shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp cinnamon shopping list
- 2 cups milk shopping list
- 1 egg, beaten shopping list
- 1/4 cup butter, melted shopping list
- 1 cup dried fruit (apples, blueberries, cranberries, raisins) shopping list
- 1/4 cup chopped nuts (optional) shopping list
- 1/4 cup unsweetened coconut (optional) shopping list
How to make it
- Preheat oven to 400
- Combine dry ingredients in a bowl (oatmeal through cinnamon)
- Combine wet ingredients (milk through butter)
- Barely mix wet ingredients into dry ingredients
- Place mix into a casserole dish and place in over for 20 minutes
- After 20 minutes, remove dish from oven and mix in dried fruit (and nuts and/or coconut if using)
- Bake for another 20 minutes
- This tastes the best when served with milk!
- Variations: replace milk with unsweetened soy milk and butter with oil for a vegan version. Add a 1/2 tsp of vanilla with the wet ingredients. Try cardamon or nutmeg with the cinnamon.
